Philtre is a single-product company. We grow, ferment, and bottle only one vinegar — a rare Black Cherry Cider Vinegar — and we have refined every step until nothing better exists.
While most Australian craft vinegars start with wine, Philtre begins with whole Tasmanian black cherries from the celebrated cold-climate orchards of the Huon Valley. The difference in flavour and complexity is significant.
Unpasteurised. Unfiltered. Undiluted. Bottled exactly as fermentation leaves it, with the living mother intact.
No commercial yeasts. No shortcuts. No compromises.
Wild Fermentation
Whole cherries are crushed and left to wild-ferment with their own natural yeasts. The fruit's sugars feed the ferment entirely — no intervention, no additions — producing an alcohol base that already carries the deep character of the cherry.
Acetification
The resulting alcohol is slowly transformed by a living mother culture into vinegar over many months. The alcohol is removed entirely. What remains is acidity, complexity, and a dense population of living metabolites.
Minimal Intervention, Maximum Integrity
Philtre is never filtered, never pasteurised, never diluted. No colouring, preservatives, or concentrates. Cold-climate cherry, two ferments, and time. That is all.
The cloudiness you see is not a flaw.

The gentle cloudiness and sediment you see in every bottle of Philtre is a living culture of beneficial bacteria and enzymes — the mother. It remains because we choose never to filter it out. It is what makes Philtre a true living vinegar.
In most commercial vinegars, the mother has been removed for the sake of clarity and shelf appearance. In Philtre, it is everything.

The fruit matters as much as the process.
Black cherries are among the most polyphenol-dense fruits available — rich in anthocyanins, the flavonoids that give them their depth of colour and much of their biological complexity. Because Philtre is unfiltered and unpasteurised, those compounds arrive in the bottle intact. The acetic acid present in all vinegars has been studied for its effect on post-meal glucose response. The living mother culture contributes naturally occurring enzymes and beneficial bacteria understood to support gut health. The anthocyanins themselves are well-documented antioxidants, and cherry polyphenols have been the subject of ongoing research into inflammation and recovery. None of this is why we make Philtre the way we make it — but it is what you keep when you choose not to filter, not to pasteurise, and not to take shortcuts.

Huon Valley, Southern Tasmania.
The Huon Valley sits at the base of southern Tasmania, a cool, maritime region with a long history of premium stone fruit production. The cold climate and long growing season produce cherries of exceptional depth — more concentrated in flavour, higher in natural acidity, richer in polyphenols than fruit grown in warmer climates.
Every cherry in every bottle of Philtre is sourced from within the wider Southern Tasmanian region. Our growers are known to us. The supply chain is short, deliberately so. It is the single most important factor in the quality of what ends up in the bottle.
